In Course #3 we learned to use fondant for the first time. Fondant is a sugary clay type substance that's the consistency of play-doh. It's great when used to cover cakes as it makes them look smoother and cleaner than with buttercream. Fondant dries out a bit so you need to work quickly with it (not as quickly as with gumpaste though). The pre-made stuff that you can buy really doesn't taste very good at all (think sugary play-doh...seriously). There is a recipe for marshmallow fondant that is supposed to be yummy, so I'll have to try that one one day. For decorating purposes, it was just easier to buy the packaged stuff.
In our second class we learned to make roses. I never did end up using them on my final cake, but I think they turned out pretty well and were relatively easy to make.
